Borage Fritters

Ingredients:

  • 1 cup flour
  • 1/2 tbsp baking powder
  • Salt to taste
  • 1/2 cup milk
  • 1 beaten egg
  • 1 cup chopped borage leaves and flowers
  • 1 tbsp grated onion
  • Oil or butter (for frying)
Sift flour, baking powder and salt into a bowl. Make a well in the center and stir in combined milk and egg to make a stiff batter. Add borage (use only the tips with the very young leaves and flowers) and grated onion.

Heat oil in a frying pan and fry the mixture in tablespoons, turning to brown both sides. Drain on brown paper and eat hot with mashed potatoes and grilled tomatoes.
